Not many pigs are kept on the island, apparently numbering 5,665.
The pigs on Ibiza are of a black breed, very similar to that found in the north of Italy, with long legs and hanging ears. Their meat is consumed fresh and, in part, smoked, using a considerable amount of these to prepare hams after being dusted with sweet paprika. Pig lard is used a lot, representing one of the main ingredients to provide a bit of substance to the meagre diet of the poor.
